“Give peas a chance!”
The Power of Pea Shoots
Peas are a powerhouse of nutrition. Pea shoot microgreens are the young, tender shoots of the pea plant. Despite their small size, they're loaded with nutrients. These microgreens are rich in vitamins A, C, and K, as well as folate and antioxidants. Incorporating them into your meals can boost your immune system and support bone health.
Un-pea-lievable!
Vitamin A: Pea shoots contain carotenoids, including beta carotene, also known as Vitamin A. Carotenoids are fat-soluble antioxidants that have anti-cancer properties by preventing damage to cellular structures.
Vitamin C: One cup of pea shoots provides about 35% of the daily value of vitamin C, which is seven times as much vitamin C as blueberries.
Folate (Vitamin B9): Pea microgreens are also a rich source of folate (B9), which plays a key role in developing and maintaining the body’s cells and protecting against DNA damage.
Iron: Pea microgreens help to prevent iron deficiency and therefore anemia by providing a significant boost to the body. A single cup serving of pea sprouts offers 10% of the recommended daily allowance of iron.
Pea-licious Recipes
Pea Shoot Salad: Toss pea shoots with cherry tomatoes, feta cheese, and a lemon vinaigrette for a refreshing salad.
Pea Pesto: Blend peas, garlic, Parmesan, and olive oil for a vibrant pesto sauce.
Stir-Fry Delight: Add pea shoots to your favorite stir-fry for a crunchy texture and sweet flavor.
